Mark Vlossak adapts year after year to produce the best vintages of the fruit picked. Grapes are harvested at peak flavor complexity, determined by Mark, then hand sorted. Natural fermentation is followed by a gentle press eliminating most of the yeast solids. New and used barrels are used for maturation. The Pinot Noir sees minimal new French oak, used to support and extrude the best of each vineyard's terroir. White wine is aged in stainless steel and used barrels only. These single vineyard wines are crafted to elevate your dining experience!
